On your device. If you enable iCloud sync in Settings, they also live in your private iCloud database — never on our servers (we don't have any).
Swipe from the edge: lower half for a text note, upper half for a voice note. Double-tap empty space on the home screen for a photo note. Left-handed? Flip the whole gesture layout in Settings.
Settings → Trash. Deleted notes stay there for 30 days before they're removed permanently.
Long-press it inside the note and choose Export.
